The famous artisanal Spanish mountain cheese, Idiazabal, is made only from the raw milk of the regional Latxa or Carranzana breeds of sheep and is named after the small Basque village of Idiazabal, located in northern Spain’s Goierri valley.
Idiazabal was first made by nomadic shepherds whose flocks would graze the lush highland pastures in the summer, then be moved to lower mountain meadows in late September when the weather threatened snow. Traditional methods to make this DOP cheese have modernized over time, but essentially remained the same for centuries.
Intensely flavored, Idiazabal’s pale-yellow, compact paste has a stalwart buttery, nutty taste with a lovely balance of acidic and spicy undertones. The natural, deeper pale-yellow rind that forms doesn’t hide the cheese’s unique and penetrating aroma. Even the natural, un-smoked version of Idiazabal takes on a slightly smoky flavor, harking back to a time when shepherds aged their summer-made cheeses in their small huts that retained then imparted smoky hardwood flavors into the cheese.

Application: Idiazabal Natural DOP is perfect for elevating any cheese tray or for tapas alongside another legendary accident: Italian mostarda. It goes well with meats, is great for grilling and adds unique cheese flavor to spice up old recipes.
Pairing: Idiazabal Natural DOP pairs well with full-bodied red wines, especially those that hail from the same Navarra region of northern Spain. Garnacha (Grenache) based wines typically have the texture and fruit to stand up to this flavorful cheese. A great second choice would be a Cote du Rhone wine.
