The ancient Sicilian tradition of adding saffron to pecorino stems back to Sicily’s twelfth century King, Ruggero the Norman, who believed in the stimulating medicinal properties of the spice. The Sicilian King requested his saffron cheese to be further embellished with peppercorns, which were already a very popular, rare and expensive addition to food in the Sicilian court.

Pairing: A good quality dry rosé like a Bandol will go well. For a white wine, the saffron plays nicely with the floral qualities of Viognier.
