Italian traditions have been a permanent part of South American, more specifically, Argentinean culture with the influx of late 19th century immigrants from Italy. Homesick for Parmigiano-Reggiano, Italian settlers took advantage of Argentina’s vast cattle grazing pastures and began making Reggianito using traditional Italian cheese-making methods. Reggianito means “little Reggiano”, as this version is significantly smaller compared to Italian Reggiano wheels.
This version from Prima is crafted in Lithuania, with a similar, robust flavor as Reggianito. Like its namesake, Reggianito is a very hard cow’s milk cheese with a delightful crunchy-crystalized, granular texture. Reggianito differs from Reggiano by having a more pronounced salty flavor. Prima Reggianito is carefully matured for a period of 12 months, which further enhances Reggianito’s distinguishing rich taste.
Application: Prima Reggianito offers a wonderful alternative to any dish or recipe calling for Parmigiano-Reggiano. It is most widely known as an excellent cheese for grating or shredding.
Pairing: Reggianito works great with a hearty Malbec or a crisp Hefeweizen.
