REAL GREEK ELOTE 
Corn on the Cob 
 
 
 
 
 
This Med-Mex mash-up treats summer’s sweet corn to an herb-infused honey glaze and zingy Feta crumbles.
 
 
 
 
SERVES: 4
 
 
 
INGREDIENTS
 
  • 6 ears fresh corn on the cob
  • 4 cloves fresh garlic, chopped
  • 2 tbsp. fresh thyme leaves
  • salt and pepper to taste
  • 4 tbsp. extra virgin olive oil
  • 6 tbsp. honey
  • 1/2 cup Real Greek Feta, crumbled
 
DIRECTIONS
 
Peel corn on the cob by removing most inner layers of green leaves as well as the silk, keeping enough green leaves to just cover corn.  Place the garlic, thyme, pepper, salt, and olive oil in a bowl and blend.  Coat kernels of corn with oil mixture and cover with the reserved leaves. Grill over medium high heat until kernels turn golden. (It is OK for some to be very dark.)  Pull the leaves down to bottom of cob and twist together to form a “handle”.  Brush the uncovered cobs with honey and grill on all sides until honey glazes. Pull cobs off grill and sprinkle immediately with crumbled Real Greek Feta.
