Named “Best Irish Cheddar” at the 2015 International Cheese Awards in Nantwich, England, the secret to Wexford’s success lies in the superior quality of milk that comes from cows grazed on the lush green pastures of Ireland’s sunny southeast. Typically aged for 12-18 months, Wexford Mature Irish Cheddar has a full, rich flavor that’s complemented by just a hint of creamy sweetness.

These handcrafted wheels of Irish Brie show bright and buttery flavors with discernible white mushroom notes on the finish. Encased in a bloomy white rind, the pale yellow paste holds just a bit of chalkiness at its center when young and becomes soft and smooth as it ages.

Cahill's Farm Cheddar with Whiskey
Cahill Farm is nestled in the midst of County Limerick, just two miles from Newcastle West, and there the Cahill family has been dairying and cheesemaking for four generations.
Beginning as simple vintage cheddar made from the milk of the Farm’s own herd, Cahill’s Farm Whiskey Cheddar is transformed when the curd is infused with Kilbeggan Irish Whiskey. The creamy, medium-sharpness of the cheddar is punctuated by the woody, slightly smoky presence of the whiskey, resulting in a smooth and warm taste sensation.

Pairing: Fine Irish whiskey, of course.
