Onatario’s famed Lenberg Farm family added British milking sheep in 2010 to create Tania Toscano Sheep’s Milk Cheese. Within two years of adding this specialty cheese for the Celebrity’s Classic Reserve line, Tania starting winning awards with First Place at the 2012 British Cheese Empire Competition in the Artisan Sheep Milk Cheese category and first place at the 2013 American Cheese Society in the Aged Sheep over 60 days category.
 
This exceptional, handmade, 100% Ontario sheep’s milk cheese is crafted in the Tuscan style and aged for a minimum of 6 months in temperature and humidity controlled maturation rooms.  The award-winning result is delightfully mild, sweet and creamy, yet also nutty, earthy and somewhat piquant with a semi-firm, smooth and slightly crumbly texture.
 
Far from the black sheep of this Canadian family, the newest additions to Lenberg Farm fit in fabulously with their already famous upperclassmen – or rather, upperclassgoats.
 
Application:  A great alternative to Italian Pecorino cheeses, Tania Toscano Sheep's Milk Cheese adds farmhouse appeal to any cheese tray and intriguing artisanal flavor to salads or a vegetable panini atop Menu Grilled Eggplant.  For an after dinner option, drizzle with honey for a delectable dessert or appetizer.
 
Pairings: Try with a youthful fruit forward Chianti or a Barbera d'Asti.
