The Toma King

Named for the beautiful alpine Maccagno pastures north of Biella, where Caseificio Pier Luigi Rosso is located, this regionally specific Toma was the favored cheese of Italy’s Queen consort, Margherita of Savoy, who held several royal titles from 1851 to 1926. Today the Rosso Dairy is steadfastly true to producing their distinguished Toma Maccagno according to ancient traditions of the Biellese valleys.
Produced with whole milk from the rare and local cattle breeds: "Pezzata Rossa d'Oropa" (Red dappled) and "Bruno Alpina," Maccagno is semi-soft with uniform small eyes that dot its dense, white paste. Within the Toma’s mild, buttery, sweetness, the delicate taste and aroma of the area’s indigenous meadow herbs are delightfully discovered. Maccagno wheels are aged on silver fir tree boards in underground cellars for 30 to 90 days. During maturation they are reverentially brine washed and develop a thin, beautifully rustic, gray/brown and inedible rind.
Application: An all-out excellent table cheese, Maccagno is also used in typical dishes of the Piedmont region, such as Riso in Cagnum, a rice dish mixed with Toma Maccagno and butter and lends itself to sauces, pasta dishes and gourmet burgers and sandwiches.
Pairing: For a white try a good quality Prosecco or if a red is in favor, keep to youthful fruity ones like a Barbera d’Asti.
