Delicious Tradition: Ireland’s Wexford Cheddar 
Perfect cheddar starts with a perfect place. For Wexford Cheddar, this place is the County Wexford in the southeast corner of Ireland, where salty Atlantic winds and soft rain help lush grasses and wild herbs flourish on gently sloping mountains. Herds of cows graze freely on the picaresque fields. The county of Wexford is known for being the sunniest region in Ireland, ideal for green grass and happy cows that spend 10 months of year on the pastures. 

Beneath its green packaging, this award-winning cheddar, carefully aged for 12 months to coax out rich flavor, has plenty of bite and a touch of sweetness. Its smooth, firm texture is surprisingly creamy. It pairs beautifully with a pint of cold Irish ale, or a crisp, dry white wine.
