Latteria Perenzin, the small, 4th generation, family owned and operated company situated in the quaint village of San Pietro di Feletto in the Veneto, is world renown for their award-winning, artisanal cheeses.
The well known and loved northeastern Italian alpine cheese, Montasio, dates back to the 13th century and achieved PDO status in 1986. Perenzin Montasio Stravecchio (extra mature) is made from only the richest, freshest mountain pasture milk available and is expertly aged for 20 months. Fresh Montasio’s delicately mild taste and aroma become increasingly stronger with age, but Perenzin masterfully maintains Montasio’s delightful cow’s milk mellowness, even after 20 months of aging, to achieve a unique equilibrium of smoothly subtle yet intensely fruity, nutty, grassy and aromatic flavors.
Carlo Piccoli, co-owner of Latteria Perenzin with his wife, Emanuela Perenzin (great-granddaughter of founder, Domenico Perenzin), is also Perenzin’s master cheesemaker, with over 25 years of expansive experience. Every cheese made at Perenzin has been guided by Carlo Piccoli’s hands-on philosophy of finding the perfect balance between ancient tradition and modern innovation.
At Perenzin being “very old” is absolutely magnificent.
Application: Perenzin Montasio Stravecchio is wonderful for grating over anything from soups and salads to pasta, rice dishes and traditional Italian polenta and risotto. Semi-hard, Stravecchio Montasio can still be sliced for use as a table cheese and is delicious with fresh fruit (especially peaches, plums and cherries grown in Montasio’s same region), dried fruit, prosciutto, olives and typical savory or sweet Italian mostarda.
Pairing: Any of the wines from the Friuli-Venezia Giulia region, such as a Pinot Grigio or a refreshing Prosecco will pair well.
