Tips for the Holiday Vegan!


Greetings from Colorado Springs!

 

This is our first holiday season in Colorado - we have been here for just three weeks -  and as I navigate my way through the seasonal festivities I wanted to share a few tips with you.
  • If you're going to a house party, ask if you can bring anything and then dazzle them with a fabulous vegan dish (food is activism!). This way, you know there will be at least one thing for you to eat! If the gracious host says "No, no, just bring yourself!" then I suggest that you don't go hungry. If I'm going to an event with food, and no clue what's on the menu, I eat a hearty snack beforehand so that I don't get cranky if there is nothing for me to eat! I also like to keep nuts, seeds or vegan protein bars in my purse...just in case.
  • If you're going to a restaurant, check out the menu online or call ahead. I suggest this not only to make sure that there are vegan options, but to help you come up with a strategy when you order. Why? I love to demonstrate how easy eating vegan is, so when I make an uncomplicated order I'm showing how simple and joyful it is to be vegan. Just this week I dined out a a restaurant that didn't offer vegan salads or entrees but I did see a quinoa pilaf as a side for a meat dish and a few vegetables were listed, as well. I simply said "I only eat plants and I'm really excited to see some fun things on your menu! I will start with the spinach salad, hold the cheese, and for my main course I would like the quinoa pilaf with broccolini and asparagus.  Can you just confirm with the chef that no butter or non-vegetable broth is used?" The waiter said "no problem!" and I had a decent vegan meal!

  • If you think you're too busy to cook during these last few days before Christmas, don't fret! You can make this easy red and green meal in minutes! 

Mediterranean Beans with Greens

Ingredients (Serves 2)

  • 1 14.5-ounce can diced tomatoes, seasoned with basil, garlic, and oregano
  • 1 15-ounce can cannellini beans, rinsed and drained
  • 1/4 - 1/2 cup vegetable broth
  • 1/8 cup green olives, diced
  • 1 teaspoon extra virgin olive oil
  • 2 cloves garlic, finely diced
  • 4 cups arugula, loosely packed (5 ounces)
  • 1/4 cup fresh lemon juice
  • 1 or 2 olives, sliced (for garnish)

Instructions

  1. In a saucepan bring tomatoes, beans and olives to a boil.
  2. Reduce heat and simmer for about 5 minutes.
  3. In a skillet, heat extra virgin olive oil on medium-high heat. Add garlic and sauté until garlic begins to brown.
  4. Add arugula and lemon juice. Stir, cover, and reduce heat to low. Simmer for 3 - 5 minutes.
  5. Serve beans over the greens and garnish with olive slices (for an even heartier meal, serve over wheat berries, farro or your favorite grain, cooked in vegetable broth).
