Capital City Fruit


Capital City Fruit is a supply chain manager of quality fruits and vegetables. We supply both retail and foodservice customers out of our 83,000 square foot distribution center.

We began our lean journey 2010 when we set out to build our current facility.  We realized that we had to lean out our processes and work cells in order to maximize space in the new building. We worked with Tim Mason of Catalyst Associates and he facilitated our first kaizen week in April of 2010.  We started by modifying all of our work cells from a linear design to an L or U-shaped design. We also changed the way we packed product using lean principles and instituted 5-S throughout the facility.  Since that initial kaizen week, we have conducted 5 more, always assigning 2 teams to tackle issues. We still feel we are just dipping our toes with lean and have a lot more that we need to accomplish.

First, make sure you have commitment from the leaders of the organization. If they do not buy into lean, no one else will.  Second, set up the infrastructure for lean to succeed. One mistake we made was continuously drifting back to old practices or not putting in the time to sustain lean.  For example, our 5-S program was hit or miss until we assigned someone with accountability for managing the 5s program. Now, each zone is consistently scored and managers are accountable to make improvements.  Some of the initiatives that arose out of our kaizens floundered or were placed on the back-burner.  We formed our Lean Committee in 2014 to keep lean front and center in our culture.  We should have formed this committee in 2010 after our first kaizen.  Bottom line, setting up systems to sustain lean are critical.

ILC has been a great resource for our lean committee.  We have sent several lean committee members to seminars and tours.  Perhaps the best benefit is interacting with other companies committed to lean and learning about their best practices and applying them here.  We are also exploring taking advantage of other benefits such as inviting ILC members to participate in our kaizen weeks.
