Thanksgiving Quinoa Salad
Serves 5


  • 1 c. quinoa
  • 2 c. water
  • 3 pears
  • 4 stalks celery
  • 2 c. arugula
  • 1/2 red onion
  • 1/2 c. craisins
  • 1/2 c. pepitas
  • 1 c. feta cheese
  • 2 T. honey
  • 4 T. apple cider vinegar
  • 6 T. olive oil 

1. Add water and quinoa to a pot, bring to a boil, then down to a simmer. Cover and cook for 15 minutes.
2. Chop pears, slice celery, dice onion and combine all ingredients into a big bowl.
3. Whisk together honey, vinegar and oil in a separate bowl.
4. Add quinoa to the bowl, drizzle on the dressing, and add feta cheese, toss and enjoy!
