A native Benqueño, Jorge hails from the local village of Benque Viejo del Carmen. Jorge has built various wooden, concrete, and earth bag homes at our ecovillage. The first house he built at Better in Belize was The Dome Home, a 972 sq. ft., Buckminster Fuller-inspired geodesic wooden home. Subsequent to the building of The Dome Home, he completed the lower half of The Toucan House, a 1772 sq. ft., 5-bedroom, 2 storey wooden home that included extensive stone work and the installation of a cistern. Thereafter, he worked on a 2-bedroom, 1-bathroom wooden hilltop cabin; a 950 sq. ft. (1200 sq. ft. with verandahs) earth bag home; another earth bag home; and a 1420 sq. ft. concrete and wood home on one of the waterfront lots. . True to his ever-creative roots, this highly skilled and innovative Belize builder, is currently building the first "wattle and daub" home at our Belize ecovillage.

Cayo, Belize. Belize is one of the quirkiest countries in the world. Geographically, Belize is in Central America, yet its strongest ties are to the English-speaking Caribbean. Belize is Caribbean, Central American and, thanks to its history as a former colony, British. Belize City's roadways are built around a system of roundabouts, but shops alongside them sell rice, beans and tortillas still ground by hand. 

English is the country's official language. The 350,000 people populating Belize today are diverse and include the descendants of migrants from Britain, Mexicans, Guatemalans, Hondurans and Nicaraguans mixed with current-day generations of the Maya who originally inhabited this land. 

Belize is a sunny country that's easily accessible from the United States and the folks all speak English. It's also one of the easiest places in the world to establish foreign residency, as well as a banking and tax haven. You could live and run a business here tax-free. 

On the other hand, this is a small country where the infrastructure is developing. The cost of living can be affordable. However, if you want to live a more developed world lifestyle that involves buying lots of things not available or produced locally, be prepared to pay an inflated price for imported goods.

Banana Bread Recipe
Banana Bread with Bounce!
 
Ingredients:
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/8 cup butter
  • 1/4 cup Western Dairies plain yoghurt
  • 1 TBSP brown sugar
  • 2 eggs, beaten
  • 2 1/3 cups mashed overripe bananas (4 bananas)
  • Chia Seeds
  • Trail Mix
  • 1 Fresh Banana for topping
Directions:
  • Pre-heat oven to 350 degrees F (175 degrees C). Lightly grease a 9 x 5 inch loaf pan.
  • Combine flour, baking soda and salt in a large bowl. Beat butter, yoghurt, and brown sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Add room-temperature eggs one at a time, allowing each egg to blend into butter mixture before adding the next. Stir in mashed bananas until well blended. Pour banana mixture into flour mixture; stir just to moisten. Transfer batter into prepared loaf pan.
  • Lace top of loaf with chia seeds, trail mix and sliced bananas.
  • Bake in preheated oven until a toothpick inserted into the center of loaf comes out clean, 60 to 65 minutes. Let bread cool in pan for 10 minutes, then turn out onto wire rack to cool completely.
Tip: Use blogo bananas for more bounce in your banana bread!
