VERACI PIZZA


Veraci Pizza is a Ballard based fresh pizza company which got its start in 2004 and began making pizza for the farmers market as a fun side project. Veraci Pizza features a delicious ultra-thin artisan crust from a secret recipe. Each batch of dough is hand prepared in a mixing bowl, never by machine, and has a three minute or less bake time in clay wood fired ovens.

Each new pizza oven is designed and built as a unique functional work of art. They use a proprietary refractory clay mixture that withstands very high temperatures, and build each oven entirely by hand. It takes eight weeks to complete one oven. Burning apple wood allows very quick cooking at temperatures ranging from 850 to 1000 degrees F. At these high temperatures, Veraci's traditional pizza is ready to eat in about ninety seconds, harkening back to the time-honored traditions of Naples, Italy.

The science behind the art is fascinating, especially the relationship between the extreme heat and the hand-mixed artisan dough. The intense energy released from the burning apple wood is transferred to the pizza three ways: through convection, conduction and radiant energy. When the pizza hits the bricks, the molecules of water in the dough turn to water vapor and escape upwards through the crust. Miniature steam vents form all over the pizza as it is transformed by the intense heat. This change of state from water to steam generates pressure and uplifts the special dough, creating a puffy, hollow, golden brown and slightly charred, crisp and chewy outer crust (the "cornicione") and a deliciously thin, melts-in-your-mouth soft inner crust.

The transformation is dramatic. In a matter of seconds, the pizza is ready to devour. The thin crust becomes adorned with beautiful textural contrasts and the subtle smoky flavors combined with the delicious meats, veggies and cheeses to create unique Veraci pizza.

Veraci Pizza features eclectic specials each week, such as “Vesuvius,” with sausage, ricotta and hot Calabria peppers on a spicy red sauce and topped with their special three cheese blend, and “Verdura Deluxe,” with fresh mushrooms, tomatoes and red onions with a pesto drizzle on a savory red sauce, topped with three cheese blend.

Duvall Poetry meets the first Wednesday of every month at the Duvall Library 7-9 PM. All ages and styles welcome. Open mic signup starts at 6:45. This month's feature is Yakima based Terry Martin.

Terry's poems, essays, and articles have appeared in hundreds of publications and she has edited books, journals and anthologies, and she has been the recipient of many writing and teaching awards. Her most recent poetry book, The Light You Find, was published by Blue Begonia Press in 2014.

King County Metro’s In Motion program will have an information and sign up booth at the market October 8 and October 15. The program provides opportunities for residents to try new ways of getting around including using the bus, walking, bicycling, and carpooling instead of driving alone, and rewards them for doing so. Residents who pledge to drive less will receive their choice of a free ORCA card, good for two weeks of unlimited travel, or a travel mug.
