2 Tbsp olive oil
1 large onion chopped
1 large head of garlic chopped
½ tsp fennel seed black pepper
3 cups chopped leeks (approx 1 lb.)
6 cups chopped potatoes (approx 2 lbs.)
1 Tbsp fresh thyme leaves
4 cups stock or water
2 cups milk
1 tsp salt (less if using commercial stock)

In a large soup pot, saute onion and garlic in olive oil until they start to brown. Add leeks, fennel, and black pepper to taste. Saute until leeks begin to soften, then add potatoes. Saute vegetable mix until potatoes starting to brown and soften, approximately 10 minutes. Add water or stock and fresh thyme, bring to boil and simmer until very soft. Remove from heat and blend, either with an immersion blender or in small batches with a blender or food processor. Add milk and salt, reheat to just below boiling point and adjust seasonings. May be eaten immediately, or held at temperature to allow flavors to disperse.

This as a great soup in midwinter also when potatoes are fresh leeks are still abundant.
