Late Summer Harvest

Though school has started and the weather is getting cooler at night, our farmers are still hard at work tending summer crops in greenhouses and the fields. Don't let the chilly evenings fool you into thinking that this summer's harvest of fresh veggies is waning.
Our farmers have plenty to share with you. There are still tomatoes of all shapes and sizes, carrots, beans, peas, kale, celery, radishes, tender lettuces, and corn is beginning to show promise of harvest in the next few weeks. Please don't forget to extend you summer share with a purchase of an Autumn CSA share; a single Autumn CSA share is $130 and a family Autumn share is $220. You can purchase your share here

Celery! is awesome.
This week's recipe uses celery, and oft over looked veggie that languishes in our crisper drawers. Not this week....Try this delicious and easy-
Italian Celery and Mushroom Salad
7 tablespoons Extra Virgin Olive Oil, divided
1 pound mushrooms, delicate varieties such as cremini, oyster, or shiitake are best, wiped clean as sliced as thin as possible
2 tablespoons fresh lemon juice
8 ribs celery, shaved paper thin (use a mandolin if you have one)
1 cup shaved parmigiano reggiano cheese
sea salt and freshly ground black pepper, to taste
1/4 cup chopped Italian flat-leaf parsley
SAUTE THE MUSHROOMS: In a skillet, heat 3 Tbsp olive oil over MEDIUM HIGH heat. When the oil is hot, add the sliced mushrooms and saute until golden brown, 5-6 minutes. Season with a little salt and pepper and then set aside to cool.
TOSS THE SALAD: In a large serving bowl, whisk the remaining 4 Tbsp olive oil with the lemon juice. Add a little salt and pepper and then taste. Add more oil or lemon juice as you like. Add the celery, cooled mushrooms, cheese, and parsley to the bowl and toss until combined. Season with sea salt and pepper and serve.

Fresh Start Farms Community Updates:
We are excited to announce that our produce will be served in the Hopkinton School district. This provides all kids in public schools in Hopkinton with the opportunity to eat fresh, locally grown foods, fostering healthy eating habits as well as understanding of how local food systems work in their community. In addition, this will give our farmers an opportunity to expand their markets, increasing income and long-term sustainability. NH enjoys a well- designed Farm to School program, we are thrilled to become a part of the statewide initiative to get more fresh, locally grown produce into NH schools. Thursday August 31st 12:30- 2pm we will be celebrating the first day of school with Gossler Elementary School students in Manchester. New American Cooperative farmers (providers to Fresh Start farm label) will be selling their produce and we will have plenty of information on nutrition and local foods, recipes for cooking and preparing local foods, as well everything you ever wanted to know about Fresh Start farmers and ORIS!




Fresh Start Farms is a collective of immigrant and refugee farmers who are participating in the New American Sustainable Agriculture Program, a project of the non-profit Organization for Refugee and Immigrant Success (ORIS). Produce is grown with soil health, environmental well-being, and consumer happiness in mind.
