This week's Tomato recipe
Homemade pasta sauce made with fresh tomatoes
Serves 6-8
Ingredients:
5 lbs fresh tomatoes, peeled and seeded (to peel cut a small x on the top of tomatoes and drop in boiling water for 10 seconds, then drop into an ice bath. Skin will peel off easily.)
1/4 Cup Olive oil
3 Medium Fresh Start Onions. diced
8 Cloves Fresh Start Garlic, finely minced
1/3 Cup Fresh Start basil leaves, chopped fine
1 Sprig Fresh Start Thyme
2 Bay leaves
1 tsp Salt
1 Carrot, 1/2 grated into sauce, other half added at end of cooking.
1 tablespoon local honey (optional)
Put olive oil into large stock pot and heat to medium, add onions, garlic, and grated carrots. Saute until onions are clear, add tomatoes, add the rest of the spices and simmer for 2-3 hours. Sauce will darken over time. Add the carrot during the last 30 minutes in order to absorb the acidity. Remove carrot, and springs of herbs. Use an immersion blender to puree sauce. May be stored in fridge for 1 week. Also suitable for canning.
