Kidney Bean Bites

By Lindsay S. Nixon

One afternoon I grabbed what I thought was corn from the freezer but later realized it was mixed vegetables. Once they thawed on the counter I knew they weren’t going back in, so I looked for a new, inventive way to use them. This recipe was the result. View the recipe here.

Recipe Booklet for the Super Bowl

Note: This recipe booklet was posted for the Super Bowl last year and has five fun recipes for the big game!

By Del Sroufe

Super Bowl Sunday is for football and food fans alike. I look forward to really good comfort food as I watch the game with friends and family. But I like knowing that whatever I eat is going to be healthy too. These five dishes are perfect game day foods that won’t leave you with that “I ate too much” hangover. Enjoy! Split Pea & Cauliflower Soup

By Katie Mae

A variation of pea soup is part of many cultures. In the 18th and 19th centuries, split pea soup played a prominent role in the British and Irish diets. Sailors loved eating peas, because they were inexpensive and stored easily in dried form. Both are still true today, which means peas remain a great staple food in modern times. Sloppy Lentil Joes

This is a quick and easy meal that also reheats well for lunch the next day or two. Serve this stuffed into a whole-grain bun and eat with your hands, or ladle it over the buns (open-face style) and eat with a fork. I usually serve steamed kale with this dish and fresh corn, when in season. View the recipe here.

This is my family’s all time favorite chili! Red lentils cook very quickly and are not only pretty but creamy and delicious. We love to serve this over a baked Yukon Gold Potato. View the recipe here.
