Breakfast Tacos

I’m always looking for ways to slip more vegetables into my diet (particularly at breakfast) and these tacos hit the nail on the head: greens, beans, and sweet potatoes before lunch? I can feel good about that! Bonus: They are really filling and leave me satisfied for hours. I tend to make these tacos for breakfast when I have leftover cooked greens and sweet potatoes from the day before. View the recipe here.

Don’t Give More Patients Statins


The new statin guidelines will not protect people from heart disease, or extend or improve their lives, according to to an op-ed by written by Drs. John Abramson and Rita Redberg. "Instead of converting millions of people into statin customers, we should be focusing on the real factors that undeniably reduce the risk of heart disease: healthy diets, exercise and avoiding smoking." We attended the premiere of The Ghosts in Our Machine, which we thoroughly enjoyed and found inspiring and meaningful. In compelling and moving artistry (and without graphic violence), the film explores the emotions of factory-farmed animals vs. farmed animals in protective sanctuaries. We also see how friendship and stewardship of farmed animals bring safety and joy to their lives, and uplifts the human spirit. Thai Vegetable Stir-Fry


We recently enjoyed a delicious oil-free Thai vegetable stir-fry by our friend Judy Micklewright. Judy said that the vegetables were steamed and then sautéed along with mushrooms in tamari, marin, and water and seasoned with lemongrass, Thai basil, lemon leaves and ginger. The dish was topped with grilled tofu and then served over brown rice. Unfortunately we don't have more info, but hopefully this gives an idea.
