We've been enjoying this quick and easy summer salad.
What makes it deliciously astringent is the variety of vinegars used in the marinade.
Cuke and Onion Salad
Salad
1 cucumber (I prefer organic English, but any organic cucumber* will do)
1 red onion
Peel the cucumber in alternating strips to make a decorative pattern.
Slice the cucumber and the onion into thin slices.
Place in a stainless steel or glass bowl. Set aside.
Separately, whisk together the following ingredients:
2 Tbsp apple cider vinegar (I use Bragg's)
2 Tbsp rice vinegar
2 Tbsp white vinegar
1 clove of smashed garlic
1/2 tsp sea salt
1/2 tsp black pepper
Pour the dressing over the sliced cucumbers and onions.
Cover and refrigerate for 1-3 hours.
Before serving, remove the garlic clove.
Additionally, you can crumble feta cheese on top or garnish with dill, cherry tomatoes or olives.
