A sunny borscht - a classic beet soup - is a great way to beet the grey January mood. I'm looking forward to roasting up a bunch of beets to melt away in a rich farm broth. Can't you imagine this served with some of our cream poured on top in a nice drizzle? Maybe a little tropical treat, a slice of orange or a clementine, on the side? We'll add small chunks of ham to our borscht, because that is how we do things around here. Amazingly, pork fat has a lot of vitamin D -- more sun!
What do farmers do in the winter? We've been busy refining our crop plans, interviewing workers, and moving through a giant stack of bookkeeping. We've also been plugging away at a list of projects that is the kind of thing that grows in the summer and shrinks in the winter... repairing, building, modifying our structures so they will be as efficient as possible come summer. At this farm, days are full year-round.
Days are also short. Please respect our order deadlines.
Newcastle area folks -- you can order any week. There is a pick-up at the farm every Wednesday from 3pm-6pm. Order before Tuesday at 7am. The links are live - use them any week!
