Summer is a great time for outdoor eating and entertaining. With the Australia Day long weekend almost upon us, there's no better time to plan an alfresco excursion.

Macadamia chocolate lamingtons

One of the highlights of this time of year is the excuse to eat lamingtons. These soft squares of sponge cake dipped in chocolate and rolled in coconut and macadamia crumbs are divine.

Summer iced ginger and maple tea

Looking for a cool, refreshing, non-alcoholic drink? This iced tea does the trick. Tea brewed with ginger, sweetened with a little maple syrup and topped with homemade macadamia milk, perfect for your summer thirst.

BBQ prawns with macadamia dukkah

Macadamia dukkah is a great party starter. You can serve it with a quality olive or macadamia oil and fresh bread, or use the dukkah as a coating for lamb, chicken or prawns.

Across macadamia farms right now, the nuts are nearing full maturity with clusters of macadamias forming on the tree. It's an exciting time to be out in the orchard.
