WEEK 1 Notes

Welcome to the FALL CSF! The weather is still hot and muggy but we know cooler temperatures will be here soon, along with a diverse assortment of fresh fish! 

This week we are delivering fresh shrimp to all our members in Durham!

The shrimp are beautiful white shrimp, also called greentails. These shrimp are primarily caught in the fall of the year when they are driven by tides and winds into our estuaries.

Local favorite - Fried Shrimp Burger!
Shrimp with Pasta and Parmesan Cheese

1 lb peeled and deveined Shrimp
1 TBSP Olive Oil
1 tsp chopped Garlic
1/2 tsp Salt
1/2 tsp Pepper
3/4 cup Chicken Broth
Crushed Red Pepper
1/8 cup fresh Lemon Juice
1/2 lb Angel Hair Pasta
Parmesan Cheese

Cook the pasta according to package directions. 
Heat the olive oil in a non-stick skillet over medium heat. Add the garlic. Cook for a minute, then add the shrimp, salt and pepper. When the shrimp are pink, add the chicken broth and between 1/8 and 1/4 tsp of crushed red pepper (be careful not to add too much). Simmer to heat the broth approximately 1 - 2 minutes. Serve the mixture over the cooked pasta and top with Parmesan cheese.
